You can define your own shortcut: Menu/Tools/Customize/Keyboard I did not know that about custom shortcuts, and I have been using OpenOffice for years. Most users probably do not know about custom shortcuts. Nevertheless, built in strike-through and underline shortcuts would be useful. Double-underline has a shortcut, but single underline does not, so this seems to be inconsistent and illogical. What user interface do you use? I can see the 'simple underline' just to the right of the italics. Same place as in OpenOffice. Which is also customisable like LibreOffice. Usually taking a light review of manuals is a great help, not to learn everything, but to help remind you of something, when the need comes. My bug is to report missing keyboard shortcuts. There is button for single underline, but there is not a keyboard shortcut for single underline nor for strike-through. Created attachment 193833 [details]

For such shortcuts, they have always been so.
You like more of them, but there are no shortcuts missing.
Or maybe you have not active:
Menu/Tools/Options/LibreOffice/View - Visibility - Shortcuts
from 7.6 version, the option is available only on
Menu/Tools/Options/LibreOffice/Advanced - Open expert configuration
see the attached screenshot.
